This online course was designed with new food safety employees, production workers and maintenance staff in mind. The curriculum reviews rodents including the House Mouse, Norway Rat and Roof Rat. Also covered are inspections and control methods including rodenticides and baiting programs. Good sanitation practices are reviewed and the hantavirus pulmonary syndrome is discussed. These topics are followed by a self-check quiz and a final exam.
